Spring is almost here and we are ready for it. Bring on the nice weather, sun and our spin on a classic Bellini! Made with the juiciest peaches and a hint of fragrant vanilla, this champagne cocktail is a celebration of sunshine in a glass. ingredients
- 12 oz. fresh or frozen peaches
- 2 tsp. honey
- 1 tsp. Pure vanilla extract or freshly grated ginger
- 1/4 tsp. orange zest (optional)
- 1 (750 mL) bottle of your favorite bubbles (we love this paired with Mumm's Napa Prestige or Veuve Clicquot - Yellow Label)
- 6 sprigs fresh mint, for serving
directions
- Defrost peaches (if frozen) on a plate for 1 hour in the refrigerator, or about 3 minutes on high in the microwave. Drain excess liquid and transfer to a blender.
- Add peaches, honey, vanilla or ginger, and orange zest (if using) to blender and blend until smooth. Taste, and add more honey if necessary.
- Refrigerate peach puree until cold, about 30 minutes. When ready to serve, add blended mix into a punch bowl with your favorite bottle of bubbly.
- Pour in a wine glass and enjoy!
