Easter brunch just got a bubbly upgrade! This Sparkling Easter Mimosa—aka The Bunny Bubbly Mimosa—is a bright, fruity twist on the classic mimosa, with a splash of berry and citrus that screams springtime joy. Whether you're hiding eggs or just sipping in your Sunday best, this cocktail is the perfect way to add a little sparkle to your celebration. It’s easy to make, beautiful to serve, and guaranteed to impress your guests.

ingredients:

  • 4 oz chilled Brut sparkling wine or Champagne

  • 2 oz mango juice (or orange juice for a classic twist)

  • 1 oz strawberry purée (fresh or store-bought)

  • Splash of lemon juice (optional, for extra brightness)

  • Fresh strawberries or edible flowers, for garnish and of course a bunny peep!

Directions:

  1. In a champagne flute, add the mango juice and strawberry purée.

  2. Gently stir to combine.

  3. Top slowly with chilled sparkling wine—pour at an angle to avoid too much fizz.

  4. Add a splash of lemon juice if desired.

  5. Garnish with a strawberry slice on the rim or float an edible flower on top for a festive touch.

Serve immediately and sip with joy!
